The Dickens County Junior Meat Judging Team placed 4th at the Texas Tech Invitational Meat Judging Contest on Saturday, March 25. The team consisted of Henry Chapman (cloverkid), Allie Weiser, Calvin Hays Chapman (11th place overall), and Grayson James. Meat Judging consists of not only evaluating carcasses on the rail, but also select cuts, yield and quality grading along with retail identification. Retail ID requires the member to identify the species, the primal (or section of the animal the cut comes from), the actual retail name, and how it is to be cooked.
